As long term orchardists, we know fruit, especially our own fruit…and the same care and attention goes into the making as it does into the growing. There are no compromises.

In the making, our goal is to find a happy medium between every day cider drinkers who cherish freshness and fruit flavours (and apparent dryness), and the engaged drinkers looking for complexity and profundity. The market evolves every year, and people’s expectations (both trade and consumer) are much higher than they used to be.

 

To satisfy our customers, we produce our cider from our own well farmed, fresh Yarra Valley fruit. Our crushing, pressing and fermentation methods mirror how we approach our best wine grapes and these factors together put us ahead of 95% of cider on the market.  The ciders are over-blended with fresh juice at the last stage, but they will still be perceived as being at the drier end of the spectrum.

 

To satisfy the cider enthusiast, we use our cellar expertise to add interest to what could be a relatively simple product. Different strains of yeast, different yeast cell loads, tweaking fermentation temperatures, using oak judiciously, time on lees, and lastly (most importantly) blending back vintage stocks (via a solera system) to create an NV house style.
