Located in Pays d'Auge, a part of Normandie well known for the quality of its agricultural products, the Dupont Family has run a 50 hectare Domain for over 4 generations, of which 30 hectares is apple cider orchards. The soils of the Domain, mainly marls and marly chalks, produce fruits with low yields that are rich and complex, that allows them to produce a large range of traditional and innovative products.

Etienne Dupont has been in charge of the Domaine since 1980, when he took over from his father Louis and his grand father Jules. He has improved the old orchard and has planted a further ten hectares of small standard apple trees.

Today, there are 27 hectares of typical varieties, 6000 apple trees, for the production of      Cider, Pommeau and Calvados. Etienne went to Cognac to learn the art of double distillation and worked in close partnership with an oenologist. From the picking of the apples, to the  final ageing of the Calvados.

Domain Dupont is fully committed to producing the best quality. Quality always comes first, often at the expense of the yield.

Cidre Bouche Fermier

Tasting Notes: Orange in colour and slightly hazy this Normandy Cider has a nose which is light and complex with aromas of acidic apples and slight notes of yeast. The taste is round and fruity with hints of citrus fruit and apples with a    lingering dry finish.

 

Food to Match: Ideal served as an aperitif, but also a wonderful  accompaniment to creamy poultry or fish dishes.

Cidre Organique

Tasting Notes: Copper in colour and slightly hazy this cider has a powerful and complex nose, a nice balance between bitterness and acidity, and hints of acidic apples, pineapple and dried fruits. The taste is intense and complex with flavours of pineapple and honey and a medium to dry lingering finish. 

 

Food to Match: Excellent with Camembert  cheese, apple deserts and is           traditionally served with salty and sweet pancakes.

Organic Cider

Cidre Dupont Reserve

Tasting Notes:  Pale yellow and slightly hazy with very light carbonation. Light aromas of apple and pineapple with a delicate, powerful and complex palate with hints of pineapple, lemon and calvados and a lingering medium dry finish.

 

 

Food to Match:  A Perfect  companion for creamy pasta dishes and ideal with  apple deserts.

Cidre Cuvee Colette

Tasting Notes:  Clear, Coppery yellow colour with a very thin and permanent foam head. The nose is lively and fresh with hints of green apple, caramel and citrus fruits. This delicate and elegant cider is fresh, fruity and slightly acidic with lovely flavours of acidic apples and pineapple.

 

 

Food to Match:  Cuvee Colette can be served as an aperitif or with apple desserts.

A perfect change from your best French Champagnes.

Calvados

Calvados Original

Info: A mix of 30% sweet apples, mainly Rouge Duret, 30% bitter apples (Mettais, Saint Martin, Frequin and Binet Rouge) and 40% of apples with acidity, mainly      Rambault. Apples which  are all cropped manually.

The apples are then mixed together, crushed and pressed. The apple juice       ferments completely and the cider produced is ready to be distillated.

Double distillation takes place six months after the end of the cider production.

The first distillation of cider gives the 'petite eau' while the second distillation of the 'petite eau', produces Calvados.

The Calvados is then aged for a minimum two years in 3000 litres oak barrels, then in 400 litres casks which have already been used for a number of years and do not release any more tannins. Thanks to this process, the calvados keeps its "Original"  fruity flavours and a very pale colour.

Pomme Captive (The captive apple)

Info : At the beginning of spring, as soon as the apples appear the carafes are hung on the branches of the apple trees. The carafe is left until the apple has   matured and  are then taken down.

The carafes are then filled with a strong (70% alc.vol) 2 year old calvados that will help bring the apple alcohol content at around 40%. A few weeks later, the       carafes are emptied and refilled with the final calvados. The apple will then        continue slowly "maturing" in the calvados. 

In order to keep the apple in good state, always keep the apple covered by adding  more calvados.
